Weekly Weigh-in Results
With only a couple of weeks until my birthday I’ve been working really hard this week. I’d very much like to reach my one stone milestone before my birthday. The hard work has paid off and I am pleased to report that I lost 2 lbs! Huzzah!
What happened this week
Well, not much really which is a good thing as it has meant that I’ve been able to stay on track.
One thing I ‘discovered’ this week was Tofurky Smokey Maple Bacon Tempeh – it’s delicious!! I have often looked at it when browsing the veggie ready meal section in the fridge isles of Sainsbury’s but this week I went for it and I’m so pleased I did!
Six slices of the tempeh work out at just 3 SmartPoints and contain 12g of protein – result! I teamed three slices (2 SmartPoints) with loads of free veg drizzled with balsamic vinegar for a filling, low point lunch.
However, they would also be great as part of a full English breakfast – yum!
How to cook vegan bacon

To prepare it simply spray a frying pan with one or two sprays of FryLight. Cook the tempeh on a medium heat for a minute or two or until the strips start to brown. Flip over and brown the other side. Serve immediately.
