Weekly Weigh-in Results
Last week I managed to reach my 1 stone off mark just in time for my birthday, hurrah! (happy birthday to me, happy birthday to me…). I celebrated my birthday with a slap up meal, a few drinks and yes, of course, birthday cake! With all that celebrating, how did I do at the scales?…
…I stayed the same – PHEW!!
What happened this week
So, not only was it my birthday this week, it was my Sister’s birthday too (a few days after mine). Therefore, we all got together as a family to celebrate both birthdays. That worked out quite well as we had one large cake between us rather than two.
Our birthday dinner was a Thanks Giving style meal – roast turkey for the meat-eaters; Linda McCartney roast for the veggies/vegans; veg; roast potatoes; gravy; bread rolls; and of course pumpkin pie for dessert – yum!
Most of the main course was actually low in points; it’s the pumpkin pie that was the killer! Unfortunately, I didn’t take a photo of the pie nor did I point it at the time (oops!) but it was vegan.
Pumpkin Pie Recipe
Essentially I followed the recipe on the back of a tin of Libby’s Pumpkin Puree. You can see it here:
I used 2 sheets of Jus-Rol shortcrust pastry; swapped in a can of full-fat coconut milk instead of the evaporated milk; and used egg replacer instead of the eggs.
You will probably need to bake it for a full hour to make sure it is set. It will still seem a bit wobbly but it will set once it’s cooled.
This recipe actually makes two 9-inch pies. Each pie serves 8 people which works out to be 9 SmartPoints per serving.
It was delicious!
