Weekly Weigh-in Results
After a lucky break last week I was more than a little worried about getting on the scales this week in case last week’s bad choices came back to bite me in the butt. But I’m pleased to report a 1.5 lbs loss which means I’ve reached my first half a stone – huzzah!
What happened this week
Last week was a bit of a disaster (if you missed it you can read it here: Week 6) so I wanted to be good this week to make up for it.
Luckily this week was kind to me as there were no cakes at work; no unexpected evenings out and no visitors. It was just me and the fridge so I was able to cook up healthy meals to drag myself back into line.
Lots of free-veg Budda bowls this week meaning I only had to count the balsamic vinegar.
Quick Stir Fry Recipe

One of the recipes I used this week was a simple stir fry with tofu. This recipe serves two and is 9 SmartPoints per serving
What you need:
- 1 large pack of stir fry vegetables (zero SmartPoints);
- Cauldren marinated tofu (6 SmartPoints for half a pack);
- 1 sachet of Blue Dragon Chow Mein sauce (2 SmartPoints for half a sachet).
Instructions:
- Heat 1 tsp of vegetable oil (2 SmartPoints – or sesame oil if you prefer for the same SmartPoints value) in a large saucepan or wok.
- Add the veg and tofu and fry for about 4 or 5 minutes.
- Stir in the Chow Mein sauce and heat through.
A lovely quick dish and if you cook everything it makes enough for at least two meals. You can freeze the second portion for another week.
Variations:
- Swap marinated tofu for 1/2 a block of plain, extra firm tofu. Drain and press for at least an hour, dice then add to the pan and gently fry for 2 to 3 minutes before adding the veg. This will reduce the recipe to 3 SmartPoints per serving.
- If you don’t like tofu you can swap it for endamame beans and/or a can of chickpeas which reduces the recipe to 3 SmartPoints per serving.
